Summer Season = fresh berries! Trying to find something to do with all of those blueberries you just bought at the farmers market? Try them in a salad!
We often associate them with sweet dishes and smoothies, but they can add a nice flavor to savory dishes as well.
Blueberries are one of the superfoods that are high in antioxidants. These are the compounds that help us fight harmful free radicals. Free radicals, like anything else in the body, need to be in balance with antioxidants. Free radicals are a necessary part of our immune system, getting sent out to destroy bacteria, viruses, and damaged cells. But when we don’t have enough antioxidants to offset them, they can get out of control causing damage to our system.
I love a great chicken salad! I use homemade mayonnaise in this recipe, which doesn’t take that much time or prep at all. You can check out the video of the recipe and do it yourself!
Blueberry Chopped Chicken Salad

1 chicken breast (chopped)
1/2 avocado (chopped)
1/2 cup fresh blueberries
1 tbsp parsley (chopped)
1/2 cup green cabbage (chopped)
1 celery stalk (chopped)
1 green onion (chopped)
2 tbsp walnut/avocado oil mayonnaise
salt and pepper to taste
Chop everything into appropriate sized pieces. Mix everything together and enjoy!
